Home Made Pancake/Waffle Mix
My sister gave me a recipe for whole wheat waffles. It makes the most delicious, filling, waffles or pancakes. It has become a tradition in my family to have waffles for lunch every Sunday. I found that is takes just as much effort to make a single batch as it does a quadruple batch. 

I modified the recipe to contain only dry ingredients (powdered eggs, etc.), so it is now a waffle mix. I also scaled the recipe up to a 20X batch. I can make this one time and it will feed my family of six every Sunday for a month. 

To make the waffles, all you need to add to the mix is oil and water. 

Store bought waffle mix is bland and costly. This recipe is made from ingredients found in a typical family food storage.

Whole Wheat Waffle Mix:

Finely grind 7-8 cups of red-hard winter wheat. It should make 10 cups of whole wheat flour.

10 cups of whole wheat flour
1/3 cup of baking powder
2 ½ tsp salt

2 ½ cups powdered buttermilk
¼ cup granulated sugar
1 ¼ cup powdered eggs

Large cereal container to store up to 10 lbs of waffle mix.

Note: Be extremely cautious when adding the ingredients so you know you get it right. If you mess up, it will cost you about $4 in ingredients. Follow the checklist as if a shuttle launch depends on it. 

Using a very large mixing bowl (or other large container) and a whisk, mix everything except the flour together.
Once those ingredients are well mixed, add the flour to the mix and whisk together. 

Makes 15 cups of waffle mix (4.5 lbs). 



When it comes time to make up some of this mix:

Add 2 cups of mix to a large mixing bowl. 
Add ¼ cup of oil to every 1 cup of mix.
Add ~1 cup of water for every 1 cup of mix.
Sometimes, I even double this recipe (to a 40X batch) so I only have to make it every 2-3 months. My container won't hold all the mix so I have to immediately whip up a quadruple batch of waffles so the rest of the mix will fit in the container.
